- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground chicken, grated Parmesan cheese, breadcrumbs, egg, minced garlic, and chopped parsley or spinach. Add onion powder, salt, and pepper, then mix gently.
- Roll the mixture into balls about 1½ inches in diameter and place them evenly spaced on the prepared baking sheet.
- Lightly spray the tops with cooking spray or brush them with olive oil. Sprinkle extra salt or pepper if desired.
- Bake for 18–20 minutes until golden brown and the internal temperature reaches 165°F (74°C).
