Method
 

Preparation Steps
  1. Thaw the puff pastry sheets according to package instructions, then preheat your oven to 400°F (200°C) and grease ramekins.
  2. Roll out the thawed puff pastry to about 1/8 inch thick, cut into circles and press into prepared ramekins.
  3. Blind bake the pastry shells with parchment and weights for 12-15 minutes, then bake for an additional 3-5 minutes.
  4. Heat olive oil in a skillet, sauté shallots and garlic until fragrant, then add spinach, and mix in cream cheese, heavy cream, Parmesan, and nutmeg.
  5. Fill pastry shells with the spinach mixture, carefully crack an egg on top of each.
  6. Beat an egg for wash and brush edges of pastry before adding seasoning around the edges.
  7. Bake assembled Napoleon for 12-18 minutes, checking yolk doneness at the 12-minute mark.
  8. Let cool, garnish with chives and serve hot.
