- Fill a large pot with water and add salt. Bring to a boil and add baby potatoes. Cook for 15-20 minutes until fork-tender. Drain and cool slightly.
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or drizzle with olive oil.
- Place cooled potatoes on the baking sheet. Smash them to about ½-inch thickness using a glass or fork.
- In a medium mixing bowl, combine olive oil, melted butter, minced garlic, smoked paprika, oregano, salt, and pepper. Whisk until well combined.
- Drizzle the seasoning mixture over each smashed potato, ensuring they are well coated. Sprinkle grated Parmesan cheese on top.
- Bake in preheated oven for 25-30 minutes until golden brown and crispy. Optionally, broil for 2-3 minutes for extra crunch.
- Remove from oven, garnish with fresh parsley and serve hot with your favorite dipping sauce.
