  • 1 teaspoon salt for boiling
For the Seasoning

Method
 

Directions
  1. Fill a large pot with water and add salt. Bring to a boil and add baby potatoes. Cook for 15-20 minutes until fork-tender. Drain and cool slightly.
  2. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or drizzle with olive oil.
  3. Place cooled potatoes on the baking sheet. Smash them to about ½-inch thickness using a glass or fork.
  4. In a medium mixing bowl, combine olive oil, melted butter, minced garlic, smoked paprika, oregano, salt, and pepper. Whisk until well combined.
  5. Drizzle the seasoning mixture over each smashed potato, ensuring they are well coated. Sprinkle grated Parmesan cheese on top.
  6. Bake in preheated oven for 25-30 minutes until golden brown and crispy. Optionally, broil for 2-3 minutes for extra crunch.
  7. Remove from oven, garnish with fresh parsley and serve hot with your favorite dipping sauce.
