- Preheat your oven to 400°F (200°C). Wash and chop the bell peppers, zucchini, cherry tomatoes, and red onions into bite-sized pieces. Toss with olive oil, salt, and pepper. Spread on a baking sheet.
- Roast the vegetables for 20-25 minutes, stirring halfway. They should be tender and slightly caramelized.
- Cook ziti in salted boiling water according to package instructions until al dente, about 8-10 minutes. Drain and return to the pot.
- Stir in marinara sauce, minced garlic, and Italian seasoning with the ziti. Add roasted vegetables and mix well.
- In a greased baking dish, layer half of the ziti mixture, dollop ricotta cheese, sprinkle half of mozzarella, then the rest of the ziti mixture, and top with remaining mozzarella and Parmesan.
- Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until cheese is melted and bubbly.
- Allow to cool for 5 minutes before serving. Scoop onto plates and enjoy!
