Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Wash and chop the bell peppers, zucchini, cherry tomatoes, and red onions into bite-sized pieces. Toss with olive oil, salt, and pepper. Spread on a baking sheet.
  2. Roast the vegetables for 20-25 minutes, stirring halfway. They should be tender and slightly caramelized.
  3. Cook ziti in salted boiling water according to package instructions until al dente, about 8-10 minutes. Drain and return to the pot.
  4. Stir in marinara sauce, minced garlic, and Italian seasoning with the ziti. Add roasted vegetables and mix well.
  5. In a greased baking dish, layer half of the ziti mixture, dollop ricotta cheese, sprinkle half of mozzarella, then the rest of the ziti mixture, and top with remaining mozzarella and Parmesan.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until cheese is melted and bubbly.
  7. Allow to cool for 5 minutes before serving. Scoop onto plates and enjoy!
