- Place rolled oats into a food processor. Blitz for about 30 seconds until finely chopped.
- Add frozen blueberries, desiccated coconut, coconut oil, and water. Blend until well combined and a thick consistency forms.
- Remove mixture, shape into a log, cut into 20 pieces, and roll each piece into a ball.
- Roll each ball in extra desiccated coconut for coating.
- If using a Thermomix, chop oats for 10 seconds at speed 9, then add remaining ingredients and blend for 20 seconds at speed 5.
- Chill the formed balls in the refrigerator for 30 minutes before serving.

Notes
Using damp hands while rolling makes forming the balls easier and prevents sticking. Store in an airtight container in the fridge or freeze for later use.
