  • 1 1/3 cups Rolled Oats Finely chopped for smoother consistency.
  • 125 g Frozen Blueberries Provides natural sweetness and color.
  • 2/3 cup Desiccated Coconut Add more for rolling.
  • 1 tablespoon Coconut Oil Opt for unrefined for better flavor.
  • 2 tablespoons Water Adjust for desired blending consistency.
For the Coating
  • extra Desiccated Coconut For rolling the balls.

Method
 

Step-by-Step Instructions
  1. Place rolled oats into a food processor. Blitz for about 30 seconds until finely chopped.
  2. Add frozen blueberries, desiccated coconut, coconut oil, and water. Blend until well combined and a thick consistency forms.
  3. Remove mixture, shape into a log, cut into 20 pieces, and roll each piece into a ball.
  4. Roll each ball in extra desiccated coconut for coating.
  5. If using a Thermomix, chop oats for 10 seconds at speed 9, then add remaining ingredients and blend for 20 seconds at speed 5.
  6. Chill the formed balls in the refrigerator for 30 minutes before serving.

Notes
