  • 1 large Cucumber English cucumber recommended, sliced.
  • 1/2 medium Red Onion Thinly sliced, can soak in water.
  • 1/2 cup Feta Cheese Crumble, optional.
  • 1/2 cup Walnuts Toasted, can substitute with pecans.
For the Dressing
  • 1/4 cup Olive Oil Base for vinaigrette.
  • 1/4 cup Fresh Orange Juice Freshly squeezed.
  • 1 tbsp Lemon Juice Can substitute with lime juice.
  • 1 tbsp Honey Or maple syrup to taste.
  • to taste Salt and Pepper For seasoning.

Method
 

Preparation Steps
  1. In a large mixing bowl, combine salad greens, sliced strawberries, cucumber, and segmented oranges.
  2. Add thinly sliced red onion. Soak in cold water if preferred for milder flavor.
  3. In a separate bowl, pour olive oil, followed by orange juice and lemon juice.
  4. Whisk vigorously for 30 seconds, then add honey or maple syrup, and season with salt and pepper.
  5. Pour dressing over the salad ingredients and toss gently.
  6. Crumble feta cheese on top and sprinkle with toasted walnuts or pecans.
  7. Transfer to a wide bowl and serve immediately.
