- Preheat your oven to 350°F (175°C) and grease an 8-inch baking dish lightly with butter or cooking spray.
- In a large mixing bowl, whisk together the all-purpose flour, brown sugar, and baking powder until well combined.
- In a separate bowl, mix the milk, melted butter, and vanilla extract until smooth. Pour this into the dry ingredients and stir gently until a thick batter forms.
- Spoon the thick batter into your prepared baking dish, smoothing it out evenly to the edges.
- Sprinkle 3/4 cup of brown sugar evenly over the top of the batter. Optionally, add a pinch of sea salt or chopped nuts.
- Carefully pour boiling water over the batter. Do not stir!
- Place the baking dish in the preheated oven and bake for 30-35 minutes.
- Remove the pudding from the oven and let it cool for 5-10 minutes before serving.
