  • 2 tablespoons Fresh Parsley chopped
For the Cheese Mixture
  • 15 ounces Ricotta Cheese or pureed silken tofu
  • 1 cup Grated Romano/Parmesan Cheese or nutritional yeast
  • 2 cups Grated Mozzarella Cheese or dairy-free mozzarella
  • 1 large Egg optional for vegan
For the Layering
  • 12 sheets Lasagna Noodles pre-cooked

Step-by-Step Instructions
  1. Cook the Meat: In a large saucepan, heat olive oil over medium-high heat. Add ground beef and Italian sausage, cooking for 8-10 minutes until browned.
  2. Sauté the Aromatics: Stir in diced onion and minced garlic, cooking for 2-3 minutes until onions turn translucent.
  3. Build the Sauce: Combine crushed tomatoes, tomato sauce, and red wine into the meat mixture. Stir in Italian seasonings, oregano, and fennel seeds. Simmer for 1 hour.
  4. Prepare the Cheese Mixture: Mix ricotta cheese, grated Romano or Parmesan, and egg in a bowl until creamy. Refrigerate.
  5. Cook the Noodles: Boil salted water and add lasagna noodles, cooking for 3 minutes. Drain and lay flat to prevent sticking.
  6. Assemble the Lasagna: In a greased baking dish, layer meat sauce, noodles, cheese mixture, and repeat until all ingredients are used.
  7. Bake to Perfection: Preheat oven to 375°F. Cover with parchment and foil, bake for 30 minutes. Remove cover and bake for another 20-25 minutes until cheese is golden.
  8. Allow to Rest: Let the lasagna rest for 20 minutes before slicing.
