- Melt 1 tablespoon of ghee in a saucepan over medium heat. Add ½ teaspoon of cumin seeds and sauté for about 30 seconds.
- Toss in 1 finely chopped medium-sized red onion and cook for 2 minutes until soft and translucent.
- Add 1 finely sliced green chilli for another 30 seconds to infuse flavor.
- Stir in 1 teaspoon of garam masala, ¼ teaspoon of turmeric, and 1-2 teaspoons of chopped fresh coriander for 30 seconds.
- Introduce 1 x 400g tin of baked beans and allow to simmer gently for 2 minutes.
- Toast 2 slices of white sourdough bread until golden and crispy, approximately 3-5 minutes.
- Generously slather the masala beans over each slice of toast.
- Sprinkle thinly sliced red onion and extra green chillies, then top with 75g each of grated Cheddar and Red Leicester cheese.
- Preheat your broiler and place the toast on a baking sheet. Broil for 3-4 minutes until the cheese is bubbly and golden brown.
- Remove from oven and cool for a minute before cutting into triangles to serve.
