Method
 

Step‑by‑Step Instructions
  1. Melt 1 tablespoon of ghee in a saucepan over medium heat. Add ½ teaspoon of cumin seeds and sauté for about 30 seconds.
  2. Toss in 1 finely chopped medium-sized red onion and cook for 2 minutes until soft and translucent.
  3. Add 1 finely sliced green chilli for another 30 seconds to infuse flavor.
  4. Stir in 1 teaspoon of garam masala, ¼ teaspoon of turmeric, and 1-2 teaspoons of chopped fresh coriander for 30 seconds.
  5. Introduce 1 x 400g tin of baked beans and allow to simmer gently for 2 minutes.
  6. Toast 2 slices of white sourdough bread until golden and crispy, approximately 3-5 minutes.
  7. Generously slather the masala beans over each slice of toast.
  8. Sprinkle thinly sliced red onion and extra green chillies, then top with 75g each of grated Cheddar and Red Leicester cheese.
  9. Preheat your broiler and place the toast on a baking sheet. Broil for 3-4 minutes until the cheese is bubbly and golden brown.
  10. Remove from oven and cool for a minute before cutting into triangles to serve.
