- Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish with butter or coconut oil.
- In a large bowl, mix together rolled oats, baking powder, ground cinnamon, and salt until evenly combined.
- In a separate bowl, whisk together egg, milk, maple syrup (or honey), melted butter (or coconut oil), and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- In a small bowl, mix melted butter (or coconut oil), brown sugar, and additional ground cinnamon to create a swirl mixture.
- Spread the oatmeal mixture in the baking dish, then swirl in the cinnamon-sugar mixture using a knife or toothpick.
- Bake for about 30 minutes until edges are golden brown and a toothpick inserted comes out mostly clean.
- Allow to cool for about 10 minutes, slice into squares, and serve with maple syrup or powdered sugar.
