  • 4 cups Cooked Chicken use leftover or rotisserie chicken
  • 1 cup Long-Grain White Rice uncooked
  • 2 cups Chicken Broth or vegetable broth
  • 1 can Cream of Mushroom Soup can substitute with cream of celery soup
  • 1 can Cream of Chicken Soup low-sodium optional
  • 2 tablespoons Butter or olive oil
  • 1 medium Onion finely chopped
  • 1 teaspoon Salt to taste
  • 1 teaspoon Ground Black Pepper or white pepper
  • 1 teaspoon Paprika smoked paprika for an exciting twist
  • 1 cup Shredded Cheddar Cheese optional, or Monterey Jack

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and grease a 9×13 baking dish.
  2. Spread uncooked long-grain white rice evenly across the bottom of the baking dish.
  3. Evenly sprinkle chopped onion over the layer of rice.
  4. Layer shredded cooked chicken on top of the rice and onion mixture.
  5. In a bowl, mix cream of mushroom soup, cream of chicken soup, melted butter, chicken broth, salt, black pepper, and paprika until smooth.
  6. Pour the creamy mixture over the chicken and rice, spreading it evenly.
  7. Sprinkle optional shredded cheese on top if using.
  8. Cover with foil and bake for 45 minutes, until rice is tender and sauce is bubbling.
  9. Remove foil for the last few minutes to brown the top if desired.
  10. Let sit for 5–10 minutes before serving.
