- Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
- In a large mixing bowl, blend the cottage cheese until smooth. Add in the eggs and maple syrup, mixing until creamy.
- Gradually add oat flour, baking powder, cinnamon, and optional vanilla extract to the wet mixture. Stir gently until just combined.
- Pour half of the batter into the prepared loaf pan. Sprinkle a layer of cinnamon sugar over it and then pour the remaining batter on top.
