  2. In a large mixing bowl, whisk the eggs vigorously until frothy and pale, about 2 minutes.
  3. Add the cottage cheese to the whisked eggs and stir until smooth and free of lumps.
  4. Mix in the shredded cheddar cheese until evenly distributed.
  5. Fold in the chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder.
  6. Dissolve the baking powder in a spoonful of water and fold this into the egg mixture.
