Step-by-Step Instructions
- Chop onions, carrots, and garlic into small pieces. Heat olive oil in a large pot over medium heat, add vegetables and sauté for 5–7 minutes until onions are translucent.
- If using bacon, chop and add it to the pot, cooking for about 5 minutes until crispy. Then add cubed chicken, stirring for 6–8 minutes until browned.
- Stir in chicken broth, white beans, and cottage cheese. Mix thoroughly and simmer for 2–3 minutes.
- Increase heat to bring soup to a gentle boil, then reduce to a simmer for 20–30 minutes, stirring occasionally.
- Use an immersion blender to blend part of the soup until desired creaminess is reached. Adjust seasoning with salt and pepper.
- Ladle the warm soup into bowls, sprinkle with cheddar cheese, and serve with crusty bread or a simple side salad.

Notes
Prep ingredients in advance for easier cooking. Don't rush sautéing vegetables to develop flavor. Adjust creaminess by blending partially and seasoning to taste.
