For the Cream Sauce
  • 1 cup Heavy Cream can substitute with half-and-half or non-dairy alternative
  • 0.5 cup Sun-Dried Tomatoes oil-packed for added richness
  • 3 cloves Garlic freshly minced
  • 0.5 cup Parmesan Cheese nutritional yeast for vegan option
  • 1 tsp Red Pepper Flakes adjust based on spice preference
  • to taste Salt
  • to taste Pepper
For the Veggies
  • 4 cups Fresh Spinach can substitute with kale or Swiss chard
For Cooking
  • 2 tbsp Olive Oil can use avocado oil
Optional Garnish
  • 0.5 cup Fresh Basil for flavor and presentation

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente, about 8-10 minutes. Drain and reserve a cup of pasta water.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add fresh spinach and chopped sun-dried tomatoes to the skillet. Cook until spinach wilts, about 2-3 minutes.
  4. Pour in heavy cream and reduce heat to low. Simmer gently for about 2-3 minutes.
  5. Stir in grated Parmesan, red pepper flakes, salt, and pepper. Cook until the cheese melts and sauce thickens, about 2 minutes.
  6. Add cooked spaghetti to the skillet, tossing to coat in the sauce. Add reserved pasta water if sauce is too thick.
  7. Let the dish sit for a minute before serving. Garnish with fresh basil if desired.
