  • 12 oz Pasta Your favorite type
For the Sauté
  • 2 tbsp Olive Oil Can swap with butter
  • 8 oz Mushrooms (sliced) Cremini or button mushrooms
  • 2 cloves Garlic (minced) Fresh or powdered garlic
  • 4 cups Fresh Spinach Can substitute with kale or Swiss chard
For the Creamy Sauce
  • 1 cup Heavy Cream Can use half-and-half or coconut milk
  • 1 cup Parmesan Cheese (grated) Pecorino Romano is an excellent substitute
For Seasoning
  • to taste Salt
  • to taste Pepper Freshly ground
For Garnish
  • fresh Basil (for garnish) Other herbs like parsley or oregano can be used

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions (8-10 minutes) until al dente. Drain and set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add sliced mushrooms and sauté for 5-7 minutes until golden brown.
  3. Stir in minced garlic and sauté for an additional minute. Add fresh spinach and stir until wilted (about 2 minutes).
  4. Pour in heavy cream and let simmer on low heat. Stir in grated Parmesan until melted and creamy. Adjust thickness with reserved pasta water if necessary.
  5. Combine the pasta with the creamy sauce in the skillet, tossing to coat. Season with salt and pepper to taste.
  6. Serve warm, garnished with fresh basil.

Notes
