Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, add sweet potato cubes, drizzle with olive oil, and sprinkle with sea salt, black pepper, garlic powder, and smoked paprika. Toss thoroughly to coat.
  3. Spread the sweet potatoes out on the lined baking sheet in a single layer, leaving space between each piece.
  4. Bake for 25-30 minutes, flipping halfway through to ensure even browning until golden brown and crispy.
  5. While baking, melt unsalted butter in a small saucepan over low heat, then stir in fresh parsley, rosemary, and thyme to infuse for 1-2 minutes.
  6. Remove the sweet potato bites from the oven, sprinkle with grated Parmesan cheese, and drizzle with herb-infused butter.
  7. Gently toss the sweet potato bites in the melted herb butter and cheese, serve immediately while still warm.
