  2. In a medium bowl, whisk together all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon until fully combined. Create a well in the center, add a large egg and milk, and stir together until smooth.
  3. In a large pot or deep frying pan, pour in vegetable oil to submerge the fritters, about 2 inches deep. Heat the oil to 375°F (190°C).
  4. Carefully dip each pineapple ring into the batter, allowing excess to drip off, and coat evenly.
