- Heat a large skillet or wok over medium-high heat for about 2 minutes, then add 2 tablespoons of sesame oil.
- Add 1 chopped onion and 3 cloves of minced garlic. Stir-fry for about 2-3 minutes until the onion is translucent.
- Toss in 1 cup of frozen peas and carrots mix and stir-fry for another 3-4 minutes until tender yet crisp.
- Push the vegetable mixture to one side, crack 2 eggs into that space, and scramble for about 1-2 minutes.
- Add 4 cups of cold, day-old cooked rice, break up clumps, and stir-fry for 2-3 minutes.
- Pour in 3 tablespoons of soy sauce over the rice and stir-fry for another 2-3 minutes.
- Continue to stir-fry for another 2-4 minutes until the rice is heated through and lightly browned.
- Serve hot, garnished with sliced green onions or sesame seeds if desired.
