  • 2 medium English Cucumbers or your favorite variety
Creamy Filling
  • 8 ounces Cream Cheese softened
  • 3 tablespoons Mayonnaise can substitute with Greek yogurt
  • 3 tablespoons Light Ranch Dressing homemade ranch can elevate flavor
  • 1 tablespoon Dill or parsley/chives
  • 1 teaspoon Garlic Salt or regular salt/fresh minced garlic
  • 1/2 teaspoon Black Pepper freshly cracked preferred

  • 1 cup Cherry Tomatoes halved

Method
 

Preparation
  1. Start by rinsing the cucumbers under cold water. Peel them if preferred and slice into ½-inch rounds.
  2. Using a ½ teaspoon measuring spoon, scoop out the center of each cucumber slice to create a well.
  3. In a medium bowl, combine cream cheese, mayonnaise, and light ranch dressing. Mix until smooth.
  4. Gently fold in dill and garlic salt into the creamy mixture, being careful not to overmix.
  5. Transfer the creamy filling into a piping bag and pipe into the hollowed-out center of each cucumber.
  6. Press a halved cherry tomato into the filling of each cucumber for garnish.
  7. Pat any moisture off the cucumber slices before serving and sprinkle with black pepper.
  8. Serve immediately or refrigerate until ready to serve.
