Step-by-Step Instructions
  1. Start by shredding 1 cup of fresh carrots using a food processor or a box grater. Set aside in a large mixing bowl.
  2. In the same bowl, mix in 1 cup of oats, ½ cup of raisins, and ½ cup of chopped walnuts, then add 1 teaspoon of cinnamon, ¼ cup of creamy nut butter, 1 teaspoon of vanilla extract, and 2 tablespoons of maple syrup.
  3. Mix all the ingredients together until fully combined, about 2-3 minutes.
  4. Cover the mixing bowl and refrigerate for approximately 30 minutes to firm up the mixture.
  5. Once chilled, scoop about 1 tablespoon of the mixture and roll it into a ball. Repeat until you’ve formed about 12 energy balls.
  6. Store in an airtight container in the refrigerator for up to one week or freeze for up to 3 months.
