Ingredients
  

For the Shrimp
  • 1 pound large shrimp peeled and deveined
  • 1 tablespoon chili powder can substitute with cayenne
  • 1 teaspoon salt sea salt or kosher salt preferred
For the Sauce
  • 2 tablespoons olive oil can substitute with avocado oil
  • 2 tablespoons salted butter can use unsalted butter
  • 1 medium onion yellow or white preferred
  • 3 cloves garlic fresh minced
  • 2 cups cooked corn kernels fresh corn preferred
  • 1 teaspoon smoked paprika regular paprika lacks depth
  • 1 cup half-and-half heavy cream can be used
  • 1 cup feta cheese fresh block feta preferred
  • 1 lime lime juiced
  • 0.25 cup fresh cilantro chopped

Method
 

Cooking Steps
  1. In a 12-inch skillet, heat 2 tablespoons of olive oil over medium heat. Season shrimp with chili powder and salt. Cook for about 3-4 minutes until pink and opaque. Remove and set aside.
  2. In the same skillet, reduce heat and add 2 tablespoons of salted butter. Add chopped onions and a pinch of salt, sauté for about 4 minutes until translucent.
  3. Stir in 3 minced garlic cloves and cook for 2 minutes until fragrant.
  4. Add 2 cups of cooked corn kernels and 1 teaspoon of smoked paprika. Stir and heat through for about 3 minutes.
  5. Pour in 1 cup of half-and-half, stirring until it simmers. Add 1 cup of crumbled feta cheese and stir until melted.
  6. Squeeze lime juice into the sauce, return shrimp to the skillet, and heat for 2 minutes. Garnish with remaining corn, lime slices, and cilantro.
