- In a large mixing bowl, combine the ground turkey, finely chopped cranberries, minced garlic, dried thyme, salt, and pepper. Mix thoroughly until well-blended.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Roll out the puff pastry on a lightly floured surface to about 1/8-inch thickness. Cut into 4x6 inch rectangles.
- Spoon about 2 tablespoons of the turkey mixture into the center of each pastry rectangle. Fold over to create a half-moon shape and seal the edges.
- Whisk one egg with a tablespoon of water to create an egg wash. Brush the tops of the rolls with the egg wash.
- Arrange the rolls on the baking sheet and bake for 18-22 minutes or until golden brown.
- Let the rolls cool on the baking sheet for about 5 minutes before serving.
