Ingredients
  

For the Beef
  • 1 lb Ground Beef or turkey or vegetarian crumbles
  • 1 tbsp Chili Powder adjust to taste
  • 1 teaspoon Onion Powder or use fresh onions
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Oregano
  • to taste Salt & Cayenne Pepper season to taste
For the Salad
  • 4 cups Romaine Lettuce chopped
  • 1 cup Cherry Tomatoes halved
  • 1 can Black Beans rinsed
  • 1 cup Sweet Corn fresh, canned or frozen
  • 1/2 cup Red Onion thinly chopped
  • 2 pcs Avocados sliced before serving
For the Dressing & Toppings
  • 1/4 cup Cilantro Lime Dressing prepared quickly
  • 1/4 cup Sunflower Seeds
  • 1 cup Pepper Jack or Cheddar Cheese lactose-free option available
  • 1 bag Tortilla Chips or Doritos for crunch

Method
 

Cooking Instructions
  1. In a large skillet over medium heat, add your ground beef. Sprinkle in chili powder, onion powder, garlic powder, smoked paprika, cumin, oregano, salt, and cayenne pepper. Cook for about 5–10 minutes until browned.
  2. While the beef is cooking, chop the romaine lettuce, halve the cherry tomatoes, and chop the red onion. Combine the fresh ingredients in a large mixing bowl.
  3. Prepare the cilantro lime dressing by blending cilantro, lime juice, olive oil, salt, and a pinch of pepper until smooth.
  4. Once the beef has cooled, add it to the mixing bowl with the chopped vegetables. Toss in black beans, sweet corn, and sunflower seeds, mixing well.
  5. Drizzle the cilantro lime dressing over the assembled salad, and sprinkle crushed tortilla chips or Doritos on top before serving.
