- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry on a lightly floured surface until you have two 10 x 10-inch squares. Cut each square into four smaller squares.
- Place a slice of ham in the center of each pastry square, followed by a mound of grated Gruyere cheese.
- Combine the spices in a small bowl and sprinkle about ¼ to ½ teaspoon over the cheese on each pastry square.
- Whisk an egg and apply egg wash to the inside edges of two adjacent corners of each pastry square.
- Fold the pastry corner over the filling to create a triangle shape, pressing down gently to secure the edges.
- Place the pastries on the prepared baking sheet and sprinkle flaky salt on top. Bake for 12-15 minutes until puffed and golden brown.
- Allow to cool on a wire rack for a few minutes before serving.
