Step-by-Step Instructions
  1. In a medium bowl, whisk together fresh lime juice, olive oil, minced garlic, ground cumin, chili powder, salt, black pepper, and smoked paprika until well combined.
  2. Place the steak in a shallow dish and pour the marinade over it, ensuring it’s evenly coated. Cover and refrigerate for at least 30 minutes.
  3. Cook white rice according to package instructions. Stir in fresh lime juice and cilantro while still warm.
  4. Warm canned black beans in a small saucepan with a sprinkle of cumin and salt. Char corn in a skillet until golden.
  5. Mix sour cream or Greek yogurt with lime juice and salt in a small bowl.
  6. Remove the steak from the marinade and pat it dry. Heat a skillet or grill and sear for 3-4 minutes on each side.
  7. Let the steak rest for at least 10 minutes, then slice against the grain into thin strips.
  8. Assemble bowls starting with cilantro lime rice, followed by beans, corn, steak slices, and toppings.
  9. Drizzle with the creamy dressing and garnish with extra cilantro if desired.
