  • 8 oz Cream Cheese Ensure it’s softened for better incorporation.
  • 1 large Whole Egg At room temperature for optimal mixing.
  • 1 large Egg Yolk At room temperature for optimal mixing.
  • 4 cups Icing Sugar Sift to prevent clumping if necessary.
  • 1 cup All-Purpose Flour Can be replaced with gluten-free flour for a gluten-free version.
  • 1 teaspoon Baking Powder Ensure it is fresh for optimal results.
  • 1 teaspoon Baking Soda Ensure it is fresh for optimal results.
  • 1/2 teaspoon Salt A crucial ingredient even in desserts.
  • 1 cup Pecans (chopped) Substitutes like walnuts or almonds can also be used.

Equipment

  • Mixing Bowl
  • Hand Mixer
  • 9x13 inch baking pan

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan with butter or cooking spray.
  2. In a mixing bowl, combine the softened unsalted butter and cream cheese. Use a hand mixer on medium speed to cream until smooth and fluffy, about 2-3 minutes.
  3. Gradually add the whole egg and egg yolk to the creamed mixture. Beat on low speed until thoroughly incorporated.
  4. Sift the icing sugar into the mixing bowl with the wet ingredients and mix on low speed until just combined, about 1-2 minutes.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  6. Gradually add the flour mixture to the wet ingredients, folding gently until just combined.
  7. Fold in the chopped pecans until evenly distributed throughout the batter.
  8. Pour the batter into the prepared baking pan and spread it evenly. Bake for about 60 minutes, or until a toothpick inserted in the center comes out mostly clean.
  9. Remove the cake from the oven and allow it to cool in the pan for about 10-15 minutes before slicing.

Notes

Using room temperature ingredients allows for better incorporation. Sifting icing sugar prevents lumps, and avoid overmixing for the best texture.
