  • 1 cup Greek yogurt swap with dairy-free for vegan
For the Vegetables
  • 1 cup cucumber diced; avocado is an alternative
  • 1 cup tomatoes diced; substitute with bell peppers
  • 1 small red onion thinly sliced; green onions are optional
For the Tzatziki Sauce
  • 1 cup tzatziki sauce hummus can be used as an alternative
For the Base
  • 2 cups rice or substitute quinoa/cauliflower rice
  • 4 pieces pita bread optional for a low-carb version

Step-by-Step Instructions
  1. Marinate the chicken by combining olive oil, lemon juice, minced garlic, and Greek yogurt. Coat the chicken and refrigerate for at least 30 minutes.
  2. Cook the chicken on a grill or skillet over medium-high heat for 6-7 minutes per side until fully cooked.
  3. Prepare your chosen base by following package instructions for rice or quinoa, or sauté cauliflower rice in olive oil for 5-7 minutes.
  4. Chop fresh vegetables: dice cucumbers and tomatoes, and thinly slice red onion.
  5. Assemble your bowls by layering your cooked base, topping with grilled chicken, chopped vegetables, and tzatziki sauce.
  6. Garnish with crumbled feta cheese and olives, then serve immediately or refrigerate components separately.
