  • 1 lb Steak (sirloin or ribeye) a well-marbled cut for best results

  • 1 medium Bell Pepper or substitute with zucchini
  • 2 cloves Garlic fresh minced garlic preferred
For the Sauce
  • 1 cup Heavy Cream or substitute with half-and-half or a milk and Greek yogurt mix
  • 4 oz Blue Cheese or substitute with feta for milder flavor
  • 1 tsp Dried Oregano or use fresh oregano for vibrant flavor

For the Topping
  • 2 cups Mozzarella Cheese can combine with provolone for unique flavor
For Garnish
  • 2 tbsp Fresh Parsley or substitute with chives or basil

Method
 

Step-by-Step Instructions
  1. Cook Pasta: Bring a large pot of salted water to a boil. Add rigatoni and cook until al dente, about 10 to 12 minutes. Drain and set aside.
  2. Sear Steak: Heat olive oil in a large skillet over medium-high heat. Add steak and sear until browned, about 3 to 4 minutes. Remove and set aside.
  3. Sauté Vegetables: In the same skillet, add chopped onion and bell pepper. Sauté for about 5 minutes, then add minced garlic and cook for 1 minute.
  4. Prepare Sauce: Lower heat and add heavy cream, scraping up any browned bits. Stir in blue cheese, dried oregano, salt, and black pepper until cheese is melted and sauce thickens.
  5. Combine Ingredients: Return seared steak to the skillet, then fold in rigatoni, ensuring pasta is coated with sauce.
  6. Bake: Preheat the oven to 375°F (190°C). Transfer mixture to a greased baking dish and top with mozzarella cheese. Bake for 15 to 20 minutes until cheese is bubbly and golden brown.
  7. Serve: Let cool for a few minutes, garnish with parsley, and serve hot.
