Step-by-Step Instructions
  1. Make the Raspberry Jam by combining frozen raspberries, granulated sugar, and lemon juice in a medium saucepan over medium heat. Stir occasionally for 23-25 minutes until thickened.
  2. For the Raspberry Syrup, bring sugar, water, and additional frozen raspberries to a gentle boil in a small saucepan. Simmer for 3 minutes, then strain and cool completely.
  3. Prepare the Mascarpone Filling by beating mascarpone cheese, powdered sugar, lemon juice, and vanilla paste in a large mixing bowl until smooth. Gradually add the heavy cream until medium-stiff peaks form.
  4. Assemble the Tiramisu by creating layers of mascarpone filling and soaked ladyfinger cookies, finishing with mascarpone on top. Chill for at least 8 hours.
  5. Serve by spreading the remaining raspberry jam on top and optionally garnish with fresh raspberries and lemon slices.
