Ingredients
  

For the Crêpe Batter
  • 1 cup all-purpose flour or buckwheat flour for gluten-free
  • 2 large eggs
  • 1 cup whole milk or almond milk for dairy-free
  • 2 tablespoons unsalted butter melted, plus more for cooking
  • 1 pinch fine sea salt
For the Filling
  • 4 slices cooked ham or turkey/chicken
  • 1 cup Gruyère cheese shredded, or Emmental/cheddar
  • 2 tablespoons Dijon mustard optional
  • 1 teaspoon freshly ground black pepper
For Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Crêpe Preparation
  1. In a large mixing bowl, whisk together the flour and sea salt. Create a well, add eggs, and mix while gradually pouring in the milk to form a smooth batter. Stir in melted butter and let it rest for 30 minutes.
  2. Place a nonstick skillet over medium heat, brush lightly with melted butter, and warm for about 1-2 minutes.
  3. Pour about ¼ cup of batter into the skillet, tilting to spread into a thin layer. Cook for 1-2 minutes until edges lift, flip, and cook the other side for 30 seconds. Keep warm while repeating.
  4. Spread a thin layer of Dijon mustard on each crêpe, layer on ham and cheese, then fold into a triangle.
  5. Return crêpes to the skillet, cooking for 1-2 minutes on each side until the cheese is melted and edges are crisp.
  6. Serve hot, garnished with parsley and black pepper.
