- Preheat your oven to 375°F (190°C). Pat the pork loin dry and season with salt and pepper.
- In a large skillet, heat olive oil and add minced garlic and fresh herbs. Sear the pork roast on all sides until golden brown, about 3-4 minutes per side. Transfer to a roasting pan, fat side up.
- Mix brown sugar, apple cider vinegar, and Dijon mustard in a small bowl. Brush glaze over the pork roast.
- Roast the pork for approximately 1 hour and 20 minutes, or until the internal temperature reaches 145°F (63°C). Occasionally brush with remaining glaze.
