- Spread the thinly sliced shallots across the bottom of the lined casserole dish and add half of the whole garlic cloves. Sprinkle fresh thyme and rosemary over the top.
- Drizzle avocado or olive oil over the chicken pieces, season generously with sea salt and black pepper, and place on top of the aromatics.
- Distribute the remaining garlic cloves around the chicken, then pour chicken broth and white wine into the dish.
- Roast the chicken uncovered for about 1 hour until golden brown and reaches an internal temperature of 165°F (74°C). Broil for an additional 5-7 minutes for extra crunch.
- Let the chicken rest for a few minutes before serving. Spoon pan juices over the chicken and enjoy with sides.
