Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C) and line a casserole dish with aluminum foil.
  2. Spread the thinly sliced shallots across the bottom of the lined casserole dish and add half of the whole garlic cloves. Sprinkle fresh thyme and rosemary over the top.
  3. Drizzle avocado or olive oil over the chicken pieces, season generously with sea salt and black pepper, and place on top of the aromatics.
  4. Distribute the remaining garlic cloves around the chicken, then pour chicken broth and white wine into the dish.
  5. Roast the chicken uncovered for about 1 hour until golden brown and reaches an internal temperature of 165°F (74°C). Broil for an additional 5-7 minutes for extra crunch.
  6. Let the chicken rest for a few minutes before serving. Spoon pan juices over the chicken and enjoy with sides.
