For the Shrimp
  • 16-20 pieces Large Shrimp, deveined and butterflied
For the Seasoning
  • 1 tbsp Smoked Paprika
  • 2 tbsp Olive Oil
  • 1 tbsp Old Bay Seasoning
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Italian Seasoning
For the Stuffing
  • 1 cup Lump or Claw Crab Meat optional
  • 1 cup Cooked Spinach strained if using frozen
  • 1 cup Chopped Artichokes drained if canned
  • 1/2 cup Mayonnaise
  • 1 tbsp Dijon Mustard
  • 1 tbsp Worcestershire Sauce
  • 1 cup Italian Breadcrumbs
  • 1 cup Cheese (Mozzarella & Pepper Jack) shredded
For the Flavors
  • 2 cloves Minced Garlic fresh preferred
  • 1 tbsp Dried Herbs
  • 1 tbsp Fresh Lemon Juice and Zest
For the Sauce
  • 1/2 cup Unsalted Butter
  • 2 tbsp Chopped Fresh Dill

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet.
  2. Season the shrimp in a mixing bowl with olive oil, smoked paprika, Old Bay seasoning, garlic powder, onion powder, dried herbs, and pepper.
  3. Prepare the stuffing by combining lump crab meat, strained cooked spinach, chopped artichokes, mayonnaise, breadcrumbs, mozzarella, minced garlic, and seasoning in another mixing bowl.
  4. Stuff each butterflied shrimp with the crab and artichoke mixture and arrange on the baking sheet.
  5. Bake the stuffed shrimp in the preheated oven for 20-25 minutes until they are opaque and the stuffing is golden.
  6. Prepare a garlic dill sauce by melting butter and mixing with minced garlic and chopped dill, then drizzle over the stuffed shrimp before serving.
