Step-by-Step Instructions
  1. Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan, wrapping the outside with aluminum foil.
  2. Combine graham cracker crumbs, sugar, and melted butter until resembling wet sand, then press into the bottom of the springform pan. Bake for 8-10 minutes until golden.
  3. Beat softened cream cheese until smooth, then add sugar, sour cream, and vanilla, mixing until combined. Incorporate eggs one at a time.
  4. Pour the filling over the cooled crust and place the pan into a larger roasting pan filled with hot water halfway up the sides. Bake for 55-70 minutes.
  5. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour, then cool to room temperature before refrigerating for at least 4-6 hours.
