Step-by-Step Instructions for Candied Pumpkin
  1. In a large non-reactive pot, mix pickling lime with enough water to create a soak for your pumpkin. Stir well to fully dissolve.
  2. Slice the pumpkin into even pieces and submerge them in the lime bath. Weigh down with a plate and soak for 4 to 8 hours.
  3. Drain the lime bath and rinse the pumpkin slices under cool running water multiple times. Pat dry with a clean cloth.
  4. Layer the rinsed pumpkin slices with granulated sugar in a large pot, covering with water. Bring to a boil, then simmer for 2.5 to 3 hours.
  5. Add cinnamon sticks and cloves during the last half hour of cooking, allowing the spices to infuse their flavors.
  6. Once cooked, cool the candied pumpkin in the syrup. Serve on a platter drizzled with tahini and sprinkled with walnuts.
