Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and place a rimmed sheet pan inside while it heats up.
  2. Peel and trim your carrots, then slice them diagonally into 1/2 inch pieces. Pat the carrots dry with a paper towel.
  3. In a large mixing bowl, toss the carrots with olive oil, kosher salt, black pepper, and fresh thyme leaves.
  4. Spread the seasoned carrots into a single layer on the preheated sheet pan and roast for about 15 minutes, stirring halfway through.
  5. While the carrots are roasting, melt the unsalted butter and mix in the pure maple syrup. Optionally, mix in orange zest and juice.
  6. After 15 minutes, remove the carrots and drizzle with the maple glaze, tossing to coat evenly.
  7. Continue roasting the carrots for an additional 8 to 12 minutes until tender and caramelized.
  8. Remove from the oven and toss with apple cider vinegar, additional salt, and any optional garnishes.
