- Preheat your oven to 425°F (220°C) and place a rimmed sheet pan inside while it heats up.
- Peel and trim your carrots, then slice them diagonally into 1/2 inch pieces. Pat the carrots dry with a paper towel.
- In a large mixing bowl, toss the carrots with olive oil, kosher salt, black pepper, and fresh thyme leaves.
- Spread the seasoned carrots into a single layer on the preheated sheet pan and roast for about 15 minutes, stirring halfway through.
- While the carrots are roasting, melt the unsalted butter and mix in the pure maple syrup. Optionally, mix in orange zest and juice.
- After 15 minutes, remove the carrots and drizzle with the maple glaze, tossing to coat evenly.
- Continue roasting the carrots for an additional 8 to 12 minutes until tender and caramelized.
- Remove from the oven and toss with apple cider vinegar, additional salt, and any optional garnishes.
