- Preheat your oven to 375°F (190°C). Prepare a baking sheet by lining it with aluminum foil and lightly spraying it with cooking spray.
- In a skillet over medium-high heat, add a splash of olive oil and sauté the diced onion and red bell pepper until translucent, about 4-5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes.
- In a large mixing bowl, combine the sautéed vegetables with the ground pork and beef, panko breadcrumbs, beaten eggs, milk, pineapple juice, cilantro, lime juice, Worcestershire sauce, jerk seasoning, salt, and black pepper. Mix everything thoroughly by hand until well combined.
- Form the mixture into bite-sized meatballs, approximately 1 to 1.5 inches in diameter, and place each meatball on the prepared baking sheet.
- Bake the Jamaican Jerk Meatballs in the preheated oven for 20 minutes, then increase the temperature to 425°F (220°C) for another 10 minutes.
- Once baked, let them cool slightly and serve with a side of spicy Caribbean Jerk marinade or sauce for dipping.
