For the Cheese Sauce
  • 2 cups Cheddar Cheese Grated fresh for optimal meltability.
  • 1 cup Monterey Jack Cheese
  • 2 cups Cream Heavy cream is the ultimate indulgence.
  • 4 tbsp Butter Vital for making the roux.
  • 1/4 cup All-Purpose Flour Rice flour can be used for gluten-free.
For Seasoning
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Paprika Adjust to taste.

Method
 

Preparation Steps
  1. Cook the macaroni in a large pot of salted boiling water for 7-8 minutes until al dente. Drain and set aside.
  2. In a skillet, melt 2 tbsp of butter and sauté shrimp until pink, then add lobster and crab meat to warm through.
  3. Melt 4 tbsp of butter in a saucepan, whisk in flour to make a roux, then slowly add cream, cooking until thickened.
  4. Stir in grated cheeses until melted, then combine with macaroni and seafood mixture.
  5. Preheat oven to 350°F (175°C), transfer mixture to a baking dish, top with extra cheese and breadcrumbs, and bake for 25-30 minutes until golden.
