- Preheat your oven to 400°F (200°C).
- Lightly grease a 9x13-inch baking dish with olive oil.
- Spread the sliced tomatoes, onion, and bell pepper evenly in the bottom of the baking dish.
- Pat the fish fillets dry and season with salt, pepper, oregano, and thyme.
- Arrange the seasoned fish on top of the vegetables in the baking dish.
- Sprinkle minced garlic over the fish fillets.
- Drizzle olive oil over both the fish and vegetables.
- Layer lemon slices over the fish fillets.
- Cover the baking dish tightly with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 5-10 minutes until the fish flakes easily.
- Remove from oven and allow to rest for a few minutes. Garnish with parsley if desired.
