Ingredients
  

Dough
  • 3 cups all-purpose flour can substitute with gluten-free flour if needed
  • 2 teaspoons active dry yeast ensure it's fresh
  • 1 cup warm water around 110°F (43°C)
  • 1 tablespoon sugar agave syrup works as a substitute
  • 2 tablespoons olive oil or another vegetable oil
  • 1 teaspoon salt
Filling
  • 1 large onion sliced and caramelized
  • 2 cups spinach fresh or thawed frozen, moisture squeezed out
  • 1/4 cup nutritional yeast optional but recommended
Assembly
  • 1 cup marinara sauce thick and well-seasoned

Method
 

Steps
  1. In a mixing bowl, combine warm water with sugar, then sprinkle yeast on top. Allow it to foam for about 5-10 minutes.
  2. Add flour, salt, and olive oil. Mix until a shaggy dough forms, then knead for 8-10 minutes until smooth.
  3. Transfer the dough to a greased bowl, cover with a damp cloth, and let it rise for about 1 hour.
  4. In a skillet, heat olive oil and caramalize the onions slowly for about 20-25 minutes. Add spinach and nutritional yeast, then let cool.
  5. Roll out the risen dough into a rectangle, spread the filling, roll tightly, and slice into pieces.
  6. Place rolls in a greased dish, cover, and allow to rise for another 30 minutes.
  7. Preheat oven to 350°F and bake for 25-30 minutes until golden brown.
  8. Cool for 10 minutes in the dish and serve warm.
