Step-by-Step Instructions
  1. Begin by cubing your chicken breasts into bite-sized pieces. In a mixing bowl, season the chicken with garlic powder, salt, black pepper, and red pepper flakes. Toss the chicken well to coat it evenly with the spices.
  2. Heat olive oil in a large pot over medium-high heat. Once shimmering, carefully add the seasoned chicken. Sauté for about 10-12 minutes, until browned. Transfer the chicken to a plate.
  3. Add more olive oil if necessary, and toss in the chopped asparagus. Sauté for approximately 2 minutes until brightened and softened. Set aside with the chicken.
  4. Add the diced onion to the pot, cooking for about 3 minutes until translucent. Stir in the dry orzo and minced garlic, toasting together for another 3 minutes.
  5. Pour in the chicken broth, stirring well. Bring to a simmer, cover, and cook for approximately 7 minutes until orzo is tender.
  6. Stir in the cooked chicken, asparagus, half and half, parmesan cheese, fresh spinach, and thyme. Mix well and heat for 1-2 minutes until spinach wilts.
  7. Plate your One Pot Chicken Orzo, garnishing with parsley and an additional sprinkle of parmesan. Serve hot and enjoy!
