- Begin by cubing your chicken breasts into bite-sized pieces. In a mixing bowl, season the chicken with garlic powder, salt, black pepper, and red pepper flakes. Toss the chicken well to coat it evenly with the spices.
- Heat olive oil in a large pot over medium-high heat. Once shimmering, carefully add the seasoned chicken. Sauté for about 10-12 minutes, until browned. Transfer the chicken to a plate.
- Add more olive oil if necessary, and toss in the chopped asparagus. Sauté for approximately 2 minutes until brightened and softened. Set aside with the chicken.
- Add the diced onion to the pot, cooking for about 3 minutes until translucent. Stir in the dry orzo and minced garlic, toasting together for another 3 minutes.
- Pour in the chicken broth, stirring well. Bring to a simmer, cover, and cook for approximately 7 minutes until orzo is tender.
- Stir in the cooked chicken, asparagus, half and half, parmesan cheese, fresh spinach, and thyme. Mix well and heat for 1-2 minutes until spinach wilts.
