- In a large pot, heat 6 cups of chicken broth over medium heat. Add 2 tablespoons of grated ginger and 4 cloves of minced garlic, stirring gently. Bring to a gentle boil over 5 minutes.
- Carefully drop in the wontons, about 20-25, into the bubbling broth. Cook for 5-7 minutes, or until they float to the surface.
- Stir in 3 tablespoons of soy sauce and a splash of sesame oil. Taste and adjust the seasoning as desired, simmer for another 2 minutes.
- In the last minute of cooking, toss in 2 cups of chopped bok choy or other fresh greens, stirring gently.
- Ladle the soup into bowls, making sure each has plenty of broth and wontons. Garnish with chopped green onions and serve hot.
