  • 2 medium English cucumbers Sliced
  • 8 oz Imitation crab or crab meat Can substitute with shrimp or tofu
  • 1 medium Avocado Cubed just before serving
For the Dressing
  • 1/4 cup Mayonnaise Light mayonnaise optional
  • 2 oz Cream cheese Can use Greek yogurt instead
  • 1 tbsp Soy sauce Low-sodium preferred
For Garnish
  • 1 tbsp Sesame seeds Toasted for added flavor

Method
 

Instructions
  1. Slice the cucumbers into 1/8-inch thick rounds and set aside.
  2. Sprinkle cucumber slices with salt and let them drain in a colander for 15-20 minutes.
  3. In a mixing bowl, combine imitation crab, diced avocado, mayonnaise, cream cheese, soy sauce, and sesame seeds.
  4. Gently fold the drained cucumbers into the creamy mixture.
  5. Mix gently to maintain the avocado's texture.
  6. Serve immediately, garnished with extra sesame seeds.
