  • 3 tsp Sugar maple syrup can be used as a substitute
  • 1 tsp Sesame Oil can swap with any neutral oil

Method
 

Step-by-Step Instructions
  1. In a small mixing bowl, combine 1 tsp of minced garlic, 3 tsp of sugar, 2 tsp of sesame seeds, and 3 tbsp of diced green onions. Use a whisk to blend these ingredients until consistent.
  2. Pour in 3 tbsp of rice vinegar, 1.5 tsp of soy sauce, and 1 tsp of sesame oil into the bowl. Stir thoroughly for about 30 seconds.
  3. Thinly slice 5 mini cucumbers or 2-3 regular cucumbers to about 1/8 inch thick. Sprinkle with 1 tsp of salt.
  4. Allow the salted cucumbers to sit for 8-12 minutes.
  5. Rinse the cucumbers under cold running water to remove excess salt and lay on paper towels.
  6. Transfer the drained cucumbers into a mixing bowl and pour the dressing over them. Toss gently.
  7. Chill for at least 10 minutes and garnish with extra sesame seeds and diced green onions if desired.
