Ingredients
  

For the Meatballs
  • 1 lb Ground Beef or ground turkey or chicken for lighter option
  • 1 medium Onion finely chopped, can substitute with shallots
  • 2 cloves Garlic minced, can use garlic powder if needed
  • 1/2 cup Breadcrumbs can use crushed crackers for gluten-free
  • 1 large Egg can replace with a flax egg for vegan version
  • to taste Seasonings mix of salt, pepper, and paprika
For the Potatoes
  • 2 medium Potatoes Yukon Gold or Russet recommended
  • 2 tbsp Olive Oil or vegetable oil

Method
 

Cooking Instructions
  1. Preheat a large skillet over medium heat for about 5 minutes.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, finely chopped onion, minced garlic, and your choice of seasonings. Mix until just combined.
  3. Shape the mixture into uniform meatballs, about 1 to 1.5 inches in diameter. Lay them on a plate while preparing to cook.
  4. Add olive oil to the skillet and once shimmering, place the meatballs in the pan. Cook for about 6-8 minutes, turning occasionally until browned.
  5. In the same skillet, add more olive oil if needed, and add diced potatoes. Cook over medium-high heat for 10-15 minutes until golden and crispy.
  6. Reduce heat to medium-low, add the meatballs back into the skillet with potatoes, toss together, cover, and let simmer for 5-7 minutes.
  7. Transfer to a serving platter, garnish with chopped parsley or herbs, serve warm, and enjoy.
