- Preheat a large skillet over medium heat for about 5 minutes.
- In a large mixing bowl, combine the ground beef, breadcrumbs, egg, finely chopped onion, minced garlic, and your choice of seasonings. Mix until just combined.
- Shape the mixture into uniform meatballs, about 1 to 1.5 inches in diameter. Lay them on a plate while preparing to cook.
- Add olive oil to the skillet and once shimmering, place the meatballs in the pan. Cook for about 6-8 minutes, turning occasionally until browned.
- In the same skillet, add more olive oil if needed, and add diced potatoes. Cook over medium-high heat for 10-15 minutes until golden and crispy.
- Reduce heat to medium-low, add the meatballs back into the skillet with potatoes, toss together, cover, and let simmer for 5-7 minutes.
- Transfer to a serving platter, garnish with chopped parsley or herbs, serve warm, and enjoy.
