  • 1 teaspoon Grated Fresh Ginger optional

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. In a small mixing bowl, whisk together light brown sugar, soy sauce, rice vinegar, minced garlic, and grated ginger until smooth.
  3. Pat the salmon fillets dry, drizzle with olive oil, and sprinkle with salt and black pepper.
  4. Place the salmon fillets in the greased dish, pour two-thirds of the glaze over them, and scatter pineapple pieces around.
  5. Bake for 12-15 minutes or until the salmon turns opaque and flakes easily.
  6. Optional: Switch to broil for 1-2 minutes for a caramelized glaze.
  7. Let rest for 5 minutes before garnishing with parsley and serving.
