Ingredients
  

Seafood
  • 2 lbs Fresh crabs Thoroughly cleaned
  • 1 lb Shrimp Cleaned
  • 1 lb Mussels/Clams Fresh and cleaned
  • 1 lb Squid Rings/Calamari Optional
Vegetables
  • 1 whole Lemon Juice one and cut the other into wedges
  • 4 ears Sweet Corn Fresh or frozen
  • 2 cups Baby Potatoes Small, waxy potatoes
Sauce
  • 1/2 cup Butter/Margarine Adjust based on preference
  • 1/4 cup Vegetable Oil Substitute with olive oil if preferred
  • 4 cloves Garlic Freshly minced
  • 2 tbsp Cajun Seasoning Homemade preferred
  • 1 tbsp Sugar Optional
  • 1 tbsp Salt For flavor

Method
 

Preparation
  1. Place crabs in the freezer for 10-15 minutes to make them easier to handle while cleaning shrimp, mussels, and squid under cold water.
  2. Fill a large pot with 6 cups of water and bring to a rapid boil over high heat.
  3. Add baby potatoes to boiling water and cook for about 5 minutes until slightly softened.
  4. Carefully add sweet corn, crabs, mussels, shrimp, and reserved lemon wedges to the pot, cover tightly, and cook for an additional 3 minutes.
  5. Check potatoes for softness using a toothpick. If they slide through easily, they are done.
  6. Remove all ingredients from broth and keep warm.
  7. In a separate pan, melt together butter and vegetable oil over medium heat. Add minced garlic and sauté until fragrant, careful not to brown.
  8. Stir in Cajun seasoning, lemon juice, and sugar to the garlic mixture. Add squid rings and cook for 1 minute before mixing in cooked seafood, corn, and potatoes.
  9. Combine everything and let heat through for another minute, making sure it’s warm and well-coated.
