  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 finely chopped onion, sautéing for 3–4 minutes until translucent and fragrant. Stir in 2 minced garlic cloves, cooking for an additional 30 seconds until you catch the delightful aroma of garlic.
  2. Stir in 1 cup of thawed and drained spinach, allowing it to cook for 2–3 minutes. Season with salt and pepper to taste, then mix in ½ cup of sour cream until the spinach is evenly coated.
  3. Preheat your oven to 175°C (347°F). Season 4 salmon fillets with salt and pepper on both sides. Sear the salmon for about 2 minutes on each side, ensuring the center remains slightly raw.
  4. Lightly grease a baking dish with olive oil. Place the seared salmon fillets skin-side down in the dish, then cover them with the creamy spinach mixture. Sprinkle 1 cup of shredded mozzarella cheese on top.
  5. Bake for about 15–20 minutes, checking for the salmon to have an opaque appearance and the mozzarella to turn a lovely golden color.
