Ingredients
  

For the Goulash
  • 2 pounds beef chuck cut into 1-inch cubes
  • 2 tablespoons olive oil can replace with canola oil
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 2 tablespoons tomato paste can substitute with crushed tomatoes
  • 2 teaspoons ground cumin can substitute with ground coriander
  • 1 teaspoon ground coriander can be omitted
  • 1 teaspoon ground cinnamon can substitute with nutmeg
  • 1 teaspoon paprika can use smoked paprika for more intensity
  • 1 teaspoon black pepper or white pepper
  • to taste salt
  • 4 cups beef broth can replace with vegetable broth
  • 1 can (14.5 ounces) diced tomatoes or fresh tomatoes if preferred
  • 1 large green bell pepper chopped
  • 2 medium carrots sliced
  • 1/4 cup fresh parsley for garnish

Method
 

Cooking Instructions
  1. Heat the olive oil in a large pot over medium-high heat.
  2. Brown the beef chunks on all sides for 5-7 minutes and set aside.
  3. Sauté the chopped onions for 4-5 minutes until translucent, then add garlic and sauté for another minute.
  4. Stir in tomato paste and spices; cook for 1-2 minutes to bloom the spices.
  5. Return the beef to the pot and mix well with the spice mixture.
  6. Add beef broth and diced tomatoes, bring to boil, then reduce heat and cover.
  7. Let the goulash simmer for 45 minutes, stirring occasionally.
  8. Add green bell pepper and sliced carrots; cover again and cook for additional 15 minutes.
  9. Taste and adjust seasoning before serving.
  10. Garnish with fresh parsley before serving.
